When you order fish at a restaurant or the local pub, you’re more than likely going to pick something mainstream like Salmon, Coorong Mullet, Butter fish etc.

What if Carp was on the menu! Would you order it?

In Australia, Carp is considered a pest species. They are labelled a ‘junk’ fish for the environmental damage they cause to Australian rivers and lakes. 

Carp have been declared a noxious species and under the Fisheries Management Act 2007 they are not to be traded in South Australia and must not be returned to the water if caught. So, we won’t be seeing carp on the menu anytime soon!

But! What if you were to eat them at home?

Outside Australia, Carp is considered a delicacy! Are we missing out on something super tasty?

 

So, can we really eat carp?

A lot of people say that carp tastes very muddy or dirty.

However, is only due to a stress hormone being released.

You have to be cool, calm and collected when catching carp.

The secret to reducing the stress in carp is once it’s out of the water, handle it carefully and chill it immediately.

Ideally, popping it in an esky with ice slurry. This puts the carp in an immediate sleep state, reducing stress levels.

 

Carp meat is super versatile which gives you the perfect opportunity to get creative with it!

The fillet of a carp is very delicate with a chicken like texture. You can crumb the fillets,

turning them into schnitzels or you can cut them into strips and have salt and pepper carp strips!

You can also mince carp fillet and use it just as you would with any other meat recipe!
